It tastes like fruit. It tastes like wine. It tastes like a coffee that arrived from somewhere you didn’t expect. Here’s what’s happening.
A few months ago a barista handed me a small white cup and said, “Tell me what you taste.” No context. No name of the coffee. Just the cup.
I tasted blackberry. Then something closer to red wine — tannins, almost. Then a note underneath all of that that was unmistakably coffee but deeper than any coffee I’d had before, richer, more layered.
“That,” said the barista, “is a co-fermented natural.”
I’d heard the term. I didn’t know what it meant. I’ve spent time finding out since, and what I found is one of the most genuinely exciting developments in specialty coffee in years — and one that most café-goers don’t know is happening.
What fermentation has always done to coffee
Coffee processing has always involved fermentation. After the cherry is harvested, the fruit around the bean needs to be removed — and how that’s done affects the flavour of what ends up in the cup more than almost any other step in the chain.

The natural process — drying the whole cherry with the fruit still on — produces coffee with more fruit-forward, wine-like flavour. The washed process — removing the fruit immediately and fermenting just the bean in water — produces cleaner, brighter, more acidic coffee. These are the two poles, and specialty coffee has spent the last decade exploring every point between them.
Co-fermentation is what happens when producers start deliberately adding something to that process.
What co-fermentation actually means
A co-fermented coffee is one where the beans are fermented alongside an added ingredient — fruit juice, whole fruits, wine yeast, kombucha cultures, honey, or even specific bacterial strains — with the intention of imparting those flavours directly into the bean.
The bean, during fermentation, absorbs the aromatic compounds from whatever it’s fermenting with. If you ferment with Kenyan blackberries, the coffee tastes of blackberries. If you use dried hibiscus, you get hibiscus. Passion fruit, orange peel, red wine grapes — all of these are being used right now on farms across Ethiopia, Colombia, and Costa Rica.
The results are extraordinary and, to anyone who encounters them without knowing what’s happening, slightly confusing. Coffee that tastes like wine. Coffee that tastes like tropical fruit with no fruit anywhere in sight. Coffee that someone at your table will taste, put down, and say: “What is in this?”
Why the specialty world is divided
Co-fermented coffees are genuinely controversial in the specialty coffee community. The purist argument is straightforward: coffee’s flavour should come from the bean, the terroir, the processing, the roast — not from something added. Co-fermentation, in this view, is manipulation. The fruit flavour in your cup isn’t the coffee’s character; it’s the character of whatever was soaked into it.
The counter-argument is equally clear: all fermentation is manipulation of a kind. Choosing to sun-dry rather than wet-process is a deliberate flavour decision. Adding blackberries to the fermentation tank is a more extreme version of the same thing, not a categorically different act.
I find myself somewhere between these positions. The most interesting co-fermented coffees I’ve tried have done something genuinely new — created flavour profiles that don’t exist anywhere else in the food world, that use the coffee as a canvas in an interesting way. The least interesting have tasted like fruit syrup added to coffee, the bean itself completely obscured.
The difference is intention and skill, same as everything else.
What to look for on a café menu
Co-fermented coffees almost always come with tasting notes that sound implausible. “Blueberry, red wine, dark chocolate” — that kind of menu language that can read like wishful description. With co-fermented beans, it’s often accurate.
If you see “natural process,” “anaerobic fermentation,” “co-fermented,” or specific fruit additions listed on a menu or bean bag, you’re in the territory. Ask the barista how they’d recommend drinking it — most co-fermented coffees show their character best as filter, where the extraction is slower and gentler and the fruit notes have room to develop.
Drink it without milk the first time. The flavour is doing enough. Milk mutes the very thing that makes it worth trying.
Why this matters for café culture in India
India grows exceptional coffee — Coorg, Chikmagalur, Araku Valley — and Indian processing is becoming more experimental. Estates that have been producing washed Arabica for decades are beginning to explore natural and anaerobic methods. A few are starting to experiment with co-fermentation.
The specialty café scene in Indian cities is growing fast enough that these beans are starting to appear on menus. If you haven’t tried an Indian natural process coffee yet — let alone a co-fermented one — now is a genuinely good time to start. You’ll taste what Indian terroir can do when it’s given room to express itself.
Which, in my experience, is considerably more than most people expect.
